No necesitás estar en asia para comer unos ricos spring rolls. Te compartimos esta receta super fresca e ideal para practicar la atención plena y jugar con nuestra creatividad mezclando diferentes sabores, colores y texturas. ¡Puedes rellenarlos con lo que quieras! Aquí solo te damos una guía
Ingredientes para 4 rollitos:
– Papel de arroz. Esto lo venden en empaques. Usarás 1 para cada rollito y probablemente te quede para hacer esta receta muchas veces
– 1 aguacate
– 1/2 pimiento rojo (o del color que te guste más)
– 1/2 mango
– Tu lechuga o vegetal verde favorito. Yo usé rúcula
– 1 puñado de hojas de menta o albahaca
– 1 puñado de fideos de arroz
– Proteína vegana de tu elección. Los hicimos con “gambas veganas” pero puedes usar tempeh o tofu marinado
Preparación:
– Pon a hervir agua en una olla y agrega los fideos de arroz. Espera 5 minutos, cuélalos y déjalos a que lleguen a temperatura ambiente
– Corta el mango, el pimiento rojo y el aguacate en tiras
– En un plato grande vierte agua tibia, toma una lámina de papel de arroz y sumérgela completa hasta que tenga una textura flexible. Entre 15 y 30 segundos.
– Saca la lámina y colócala en una superficie plana. Usamos una tabla de madera
– Coloca los ingredientes de manera horizontal en el centro del papel de arroz: el aguacate, mango, pimiento, menta, proteína, fideos de arroz y la lechuga o rúcula de último. Esto ayuda a que sea más fácil a la hora de enrollar.
– Toma la lámina de papel de arroz que está de tu lado, con algo de presión coloca sobre el relleno. Toma los plieges que te sobran a los lados, también sobre el relleno, y luego termina de enrollar.
¡Listo! Con la práctica te saldrán hermosos
Salsa de tahini: para los rollitos de primavera, lo mejor es tener una salsa deliciosa para sumergirlos. ¡Mezcla todos estos ingredientes con una batidora de mano o licuadora y listo!
1/4 taza de tahini
2 cucharadas de jugo de limón
1 cucharada de sriracha, o el picante de tu preferencia. Esto lo puedes omitir si no te gusta el picante, o probar con menos cantidad.
1 cucharada de tamari o salsa de soja
1 cucharada de vinagre de arroz
1 diente de ajo
1 cucharadita de jengibre cortado pequeñito
2 cucharadas de agua, o un poco más si lo necesitas
